Collard Greens
THE INGREDIENTS
1 red onion, diced
4 cloves of garlic, chopped
2 bunches of collard green, cleaned and stems removed
½ cup Old Yella sauce
2 ham hocks
2 tablespoons sugar (optional)
32oz chicken stock
In a large stockpot - sweat the ham hocks for 5 mins on medium heat.
Cook onions and garlic until onions turn translucent. Add greens to pot and cover with chicken stock (water can be added if needed).
Reduce pot to simmer.
Cook an additional 2-4 hours (until greens are tender).
