Chipper Dog Potato Salad
INGREDIENTS.
1/2 cup Chipper Dog ‘Old Yella’ Sauce
4 medium-sized Yukon Gold potatoes, peeled & diced
1 cup mayonnaise
1 1/2 cups shredded cheddar cheese
1/4 cup cooked bacon, diced
4 green onions, chopped
2 cloves of roasted garlic (or raw, minced)
2 hard-boiled eggs, diced
2 Tablespoons fresh tarragon, chopped
INSTRUCTIONS.
Bring a pot of salted water to boil, add potatoes & cook until soft (approximately 10-15 mins). Strain the potatoes and set in the fridge, allowing to cool completely.
In a large mixing bowl combine the mayo and Old Yella sauce, mixing thoroughly. Add in the rest of the ingredients and mix until potatoes are evenly covered.
Before serving top with additional shredded cheddar, bacon bits, and green onion.
